Braised Lettuce

Enjoy Locust Run Farm lettuce in a fresh salad or as this delicious side dish with a subtle flavor!

Braised Lettuce
2 cups of Harv Roehling’s lettuce (any flavor)
2 tablespoons butter
1 tsp lemon juice
Pinch of salt
Pinch of pepper


Break washed lettuce leaves into small pieces. Melt 2 tablespoons of butter in a skillet. Add lettuce and quickly stir it in the butter. Add lemon juice, salt, and pepper. Reduce heat. Stir ingredients again. Cover skillet and cook on low heat for 15 to 20 minutes. Lettuce will provide its own liquid for simmering. (Check it, and if necessary, add a little water.) Bring to table and serve hot.
